Saturday Supper - Episode 2

Saturday night was the second installment of monthly dinners with my family.  Again, my husband had to work, so that was a bummer.  I make sure to plan things around when he will get home so he is able to be included.  Dinner wasn't too fancy or entirely homemade this month.  The appetizer was Spinach and Artichoke dip. It was really yummy with Triscuits.  I made Chicken Parmesan, and pasta, and also a Crockpot of (frozen) meatballs with marinara.  My sister in law made an amazing salad with all kinds of surprises.  I'll have to have her come up with some salad recipes that I can post, she's quite inventive and they are always delicious.  


I made White Chocolate Raspberry Cheesecake, which I overcooked a little, but it was still good, although it seems my whole family is staying away from sweets right now, so I have almost a whole cheesecake in my fridge right now, DANGER!  Not only, that but since I thought it was a little overcooked, I made butterscotch brownies, just in case the cheesecake was inedible... CRAP!  So I have a lot of sugar looming in my house.  


Saturday was the kind of day that I just couldn't catch my breath.  I was frantic from the start, so I was a bit all over the place.  I burned my hand with the boiling pasta water, and as I mentioned before I burned the cheesecake, it was a bit of a disaster.  But I think everyone still had a good time.  

Not a lot of things make me happier than loved ones around my table.

And my mom did bring me flowers, and they are gorgeous.  Something makes me think they wont last as long as last months, I threw those away to make room for the new ones.  I had them for the whole month!
