Farmer's Breakfast Casserole

My kitchen and I haven't been all that close lately.  I have been so busy!  Excuses, I know.  It's so much easier to grab whatever is quick and easy, but I love me some kitchen time!  Here is a recipe for a pretty easy hearty breakfast to feed the whole family, probably for more than one day.  




Farmers Breakfast Casserole

1 roll crescent dough
1/2 pound Maple Bacon
1/2 Red pepper chopped
1/2 Green pepper chopped
1c chopped mushrooms
1/2 yellow onion, chopped
8 eggs
2c shredded cheddar cheese
2c shredded mozzarella cheese





After your bacon is cooked, move from baking sheet to paper towels. 






Scramble up the eggs and then mix in the cheese.


You'll know that it's done by placing the blade of a knife in the center, it should not be runny.
